For some wines, we decide to keep one or more bottles. There are as many as three criteria for this:
Firstly, the wine must be storable (otherwise you simply can't keep it). We first follow the advice of the vintner whose estate the wine comes from. Secondly, the wine must have tasted above average, not to everyone, but to some of our guests. There can be many reasons for this. And thirdly, we must have enjoyed the wine ourselves or there must be a special story or anecdote connected with the wine.
