As soon as the steam valve is opened, a high-performance physical process begins. With one hand we gauge the temperature, whilst with the other we guide the steam wand with such precision that a mini tornado forms inside the milk jug.
The guest wonders why the barista is standing in front of our 2016 Vibiemme machine, staring so intently at the milk jug? He is waiting for the perfect moment. It is a dance of sound and touch. First, we let the milk ‘breathe’ briefly – that’s the gentle slurping sound you hear. Then we tame the swirl until the texture is beautifully creamy. A fully automatic machine can do a lot, but it cannot sense when the milk has reached its optimal consistency. Only our hands on the hot steel can do that. We tap, we swirl and we pour with a steady hand. No high-tech sensor in the world can replace the instinctive feel for the perfect cup.
